Buffalo Chicken Lettuce Wraps Recipe (Keto, Healthy)

If you love Buffalo chicken but are looking for something a bit healthier then this easy to make Buffalo Chicken Lettuce Wraps will be your new favorite meal. This delicious low carb meal uses easy to make shredded chicken and are packed with tangy buffalo sauce. They make a quick weeknight dinner, lunch for work or school and even a nice high protein snack.

Want to make this recipe quick and don’t have shredded chicken on hand? The next best thing is using a rotisserie chicken to quickly create shredded chicken. Simply pull off the meat and shred it up using two forks. It’s a huge time saver on those busy weeknights and will save you from another expensive take out meal.

Ingredients You’ll Need for These Buffalo Chicken Lettuce Wraps:

Shredded Chicken: You could cook your own chicken and shred it. One way to save yourself time is to use this crock pot shredded chicken or buying a rotisserie chicken to use to make shredded chicken.

Olive Oil – you need just a bit of oil to quickly sauté the vegetables and to cook the chicken until it’s warm. You can always use your favorite oil such as canola, vegetable, coconut, etc.

Green Bell Pepper, finely diced – this adds a bit of color and flavor to these wraps

Celery, sliced – celery sticks are often served with buffalo chicken and it makes a great addition to these wraps.

Franks Red Hot Sauce – this is what makes that delicious buffalo sauce flavor.

Butter, melted – I like to add a little into the hot sauce for the flavor.

Seasonings – these include onion powder, garlic powder, salt and black pepper.

Green Onions – this is optional but tastes great with these wraps.

Lettuce – lettuce leaves are used to hold the shredded buffalo chicken. You can use butter lettuce, Boston lettuce (also called Bibb lettuce) or even Romaine lettuce. Butter and Boston lettuce are the best varieties for making wraps because their leaves are round and soft so they hold the chicken better. Optional toppings: blue cheese crumbles. If you like blue cheese with your buffalo chicken then feel free to add some cheese crumbles on top of the wraps. You can also add sliced red onions, diced tomatoes, avocado slices and even a drizzle of ranch dressing or blue cheese dressing if you want to dress up your wraps even more.

How to make these Buffalo Chicken Lettuce Wraps:

Here are some prep tips to help you put this recipe together quickly:

  • Dice the bell pepper and slice the celery stalks. Set them aside until you are ready to make this recipe.
  • Prepare the shredded chicken. If you’ve previously made Slow Cooker Shredded Chicken then take it out the night before making this recipe and allow it to thaw in the refrigerator. If you are using a rotisserie chicken then pull the meat off the chicken, shred and set aside until you are ready to make this recipe.
  • Both the vegetables and the chicken can be prepped a day or two before making this. Put them in an airtight container and store in the refrigerator until you are ready to cook.

To make this recipe:

In a large skillet over a medium heat add the olive oil, diced bell pepper and celery and sauté for 3 to 4 minutes until just beginning to soften.

Add the shredded chicken, onion powder, garlic powder. Stir well. Season with salt and pepper to taste. Cook for 2 to 3 minutes or until the chicken is heated through.

In a small bowl combine the Frank’s hot sauce and the melted butter. Mix until combined.

Pour the hot sauce over the chicken mixture and stir to coat the chicken in the sauce. Heat for another minute or two until the sauce is heated through. Remove from the heat.

To serve spoon a few tablespoons of the chicken mixture into the lettuce cups. Sprinkle some green onions over the top. Add any additional toppings you may desire and serve.

How to store buffalo chicken lettuce wraps:

The best way to store this recipe is to package the lettuce and the buffalo chicken separately. This will stretch out the amount of time you can store these wraps without affecting the texture.

Lettuce: wash the lettuce leaves and dry before storing in the refrigerator until needed.

Buffalo chicken mixture: The chicken mixture can be store in the fridge in an air tight container for 3 to 4 days. If the sauce starts to separate from the mixture just heat the chicken up and you should be able to stir it back in to coat the chicken.

If you have filled wraps store them in a container in the fridge for 1 to 2 days. I find after that period the lettuce leaves start to change texture.

Are these Buffalo chicken lettuce wraps keto?

Yes these wraps are low in carbs. The hot sauce, vegetables and lettuce adds a small amount of carbs to this meal. When made and divided up into 4 portions you will be able to enjoy several lettuce wraps for just 4 net carbs (6 grams of carbs total minus the fiber gives you the net carbs).

This meal is so good no one will even know it’s low carb. Remember to add in the carbs from any additional toppings you might include.

What is Buffalo Sauce made of?

You can purchase ready made Buffalo Sauce or you can make your own. Buffalo sauce is usually made with hot sauce, butter and often a blend of other ingredients including Worcestershire sauce, vinegar, garlic powder, sometimes onion powder and cayenne pepper.

I like to make a super simple Buffalo sauce made from Frank’s hot sauce and butter. That’s it. The added butter makes the sauce nice and creamy. It complements the spicy vinegar taste of the hot sauce.

If you have a favorite recipe or bottle Buffalo sauce feel free to replace the Frank’s hot sauce and butter in this recipe with your favorite sauce.

What is the best lettuce for lettuce wraps?

You want to pick a lettuce that is sturdy yet flexible. You also don’t want it to have a center rib that is thick and will snap when you go to fold your lettuce wrap.

Some of the best varieties that work best is Bibb, Boston or Butterhead lettuce. Their leaves are soft enough to roll or are cup like so they can hold the shredded chicken mixture.

If you like something with a little more crunch then Iceberg will work. But, you’ll need to sort through the leaves to find appropriate ones to use. You want a leaf that is deep enough to hold the filling but with a center rib that isn’t so large that it will snap in half when rolled or folded.

Leaf lettuce such as romaine, green leaf and red leaf have a large firm stem that will snap if you attempt to roll the lettuce around the filling. I usually pass on using this type of lettuce for lettuce wraps.
