Buffalo Chicken Lettuce Wraps

Ingredients

  • 2 tablespoons olive oil
  • 1 bell pepper green, finely diced
  • 2 stalks celery sliced
  • 1 1/2 pounds shredded chicken
  • 2 teaspoons Onion Powder
  • 1 teaspoon Garlic Powder
  • 1/2 cup Frank's Hot Sauce
  • 2 tablespoons butter
  • 2 Green Onions sliced
  • 1 head Bibb lettuce

Instructions

  • In a large skillet over a medium heat add the olive oil, diced bell pepper and celery and sauté for 3 to 4 minutes until just beginning to soften.
  • Add the shredded chicken, onion powder, garlic powder. Stir well. Season with salt and pepper to taste. Cook for 2 to 3 minutes or until the chicken is heated through.
  • In a small bowl combine the Frank’s hot sauce and the melted butter. Mix until combined.
  • Pour the hot sauce over the chicken mixture and stir to coat the chicken in the sauce. Heat for another minute or two until the sauce is heated through. Remove from the heat.
  • To serve spoon a few tablespoons of the chicken mixture into the lettuce cups. Sprinkle some green onions over the top. Add any additional toppings you may desire and serve.

Notes

Optional toppings: blue cheese crumbles. If you like blue cheese with your buffalo chicken then feel free to add some cheese crumbles on top of the wraps. You can also add sliced red onions, diced tomatoes, avocado slices and even a drizzle of ranch dressing if you want to dress up your wraps even more.
If you are counting carbs make sure to include the carbs from any additional toppings you might add to these lettuce wraps.
