Start by making the cream cheese filling. Place the cream cheese, milk, lemon juice and vanilla extract in a bowl. Using a hand mixer blend until smooth.
Sprinkle the sugar over the cream cheese mixture. Continue to mix until blended. Set the cream cheese mixture aside.
Preheat oven to 375 F. Spray a baking sheet with non-stick spray.
Unroll the crescent dough sheet. Cut it into 8 equal pieces (see the photos).
Spread a rounded teaspoon of cream cheese on each square. Leave space around all 4 edges.
Spread a teaspoon of jelly on top of the cream cheese.
Starting on one end begin rolling the dough. As you roll it use a fork or your fingers to gently crimp the edges of the dough as you roll it. This will help to keep the filling from leaking out while baking.
Place filled crescent dough on the baking sheet. Bake 10 to 13 minutes or until the tops are golden brown. Remove from oven and allow to cool.
Follow the directions on your package of candy melts/candy coating. Use a sandwich bag to help you pipe the melted candy on top of each crescent roll.
