Ingredients

  • 2 1/2 cups Almond Flour
  • 1/3 cup Swerve Monk Fruit or other no calorie sweetener
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/3 cup Unsweetened Almond Milk
  • 1/4 cup butter melted
  • 3 eggs large
  • 1 cup blueberries fresh

Instructions

  • Preheat oven to 350 degrees.
  • Line a muffin pan with muffin cups or spray muffin cups with nonstick spray.
  • In a large bowl mix together almond flour, sweetener, baking powder and cinnamon.
  • Add almond milk, melted butter and eggs to the dry ingredients. Mix until just blended.
  • Fold in blueberries.
  • Divide batter evenly between 12 muffin cups.
  • Bake for 25 minutes or until edges are golden brown and a toothpick inserted into the center comes out clean.

Notes

Swerve, Monkfruit and other erythritol sweeteners have carbs that are not broken down by the body so they are not counted in the net carbs. These muffins have 12 grams total carbs. Of this 5.5 grams is from the sweetener. This leaves 6.5 grams of carbs. Once you subtract the fiber (another carb that does not impact blood sugar) each muffin has 3.5 grams of net carbs.
