Ingredients

  • 6 hard boiled eggs
  • 1 medium avocado
  • 2 tablespoons mayo
  • 1/2 teaspoon Black Pepper
  • 1/4 teaspoon Salt
  • 2 tablespoons fresh parsley finely chopped
  • paprika for garnish

Instructions

  • Hard boil the eggs, cool and remove shells. Cut in half. Remove the egg yolks and place in a bowl.

  • Peel the avocado and mash it in a separate bowl. Mix in the egg yolk.

  • Add mayonnaise, lemon juice, salt, and pepper to the bowl. Mix everything together until well combined.
    2 tablespoons mayo, 1/2 teaspoon Black Pepper, 1/4 teaspoon Salt
  • Rinse the egg whites to remove any residue and pat them dry gently. Transfer the avocado and egg yolk mixture into a piping bag and carefully pipe it back into the hollows of the egg whites.
  • Garnish the deviled eggs with paprika powder and parsley.

Notes

Looking to change up the flavor a bit? Trying adding in one of the following: 2 teaspoons of lime juice or 2 tablespoons of finely diced tomato (creates a delicious chunky guacamole deviled egg).
