Keto Hasselback Caprese Chicken

Stuff with fresh mozzarella and tomato slices. Add a fresh basil leaf in between the cheese and tomato slices for even bigger flavor.

Ingredients

  • 3 to 4 boneless skinless chicken breasts
  • 8 ounces or more fresh mozzarella cheese cut into thin slices
  • your favorite pesto sauce
  • 2 medium fresh tomatoes cut into thin slices
  • salt and pepper

Instructions

  • Preheat the oven to 400 F.
  • Line your pan with foil for an easier clean up.
  • Make 4 or 5 cuts into the chicken but do not cut all the way through. Stop cutting about 1/4 to 1/2 an inch from the bottom of the chicken.
  • Sprinkle with salt and pepper to taste.
  • Brush the pesto sauce over the top of the chicken making sure to get in between the slices.
  • Place a slice of cheese and a slice of tomato between each cut in the chicken breast.
  • Bake for 25 minutes or until the internal temperature of the chicken is 165 F.
