Dice vegetables.
Please oil or butter into pot.
Add onion, carrot, celery and peppers.
Saute until just beginning to soften.
Add in garlic and jalapeno/green chilies.
Add in tomatoes, broth, oregano, cumin, chili powder.
Add in chicken and zoodles.
Cook over a medium heat until zoodles have softened.
Add salt and pepper to taste.
Serve as is or top with shredded cheese, sour cream or avocado slices.
