Keto Ice Cream Crunch

There are many ice cream and frozen dessert brands currently available on the market that say they are lower in carbs and are keto friendly. But when you check the nutritional label you discover that they might not be the best keto options out there.

Often they are higher in carbs that you expect per serving. I don’t know about you but having 11 net grams of carbs for a 1/2 cup serving doesn’t fit my keto lifestyle.

Others contain ingredients that we try to avoid such as cane sugar, corn syrup and wheat.

Then there is the taste.

Some of these ice creams are trying to meet the needs of several different types of consumers. A low fat ice cream can only get it’s creamy texture from having lots of other texture modifying ingredients added in. These often come in the form of various starches. While some of these ice cream brands have flavors that are low in fat they are also higher in carbs because of this.

Others are low in carbs but the taste and texture is far from a creamy ice cream texture. They use various proteins to give the “frozen dessert” some body but, to me, they often have a mouth feel that leaves me wondering what I’m eating.

When I’m in the mood for ice cream I had been passing over all these alternative brands and just went for a regular brand that was sugar free or reduced sugar. Yes they weren’t keto but this was a once in a while treat and I try to keep a close eye on my serving size. After all, when you’re in the mood for creamy ice cream, settling for something less just leaves you craving it even more.

While shopping the other day I found a new brand at one of my local grocery stores. Rebel Creamery is a new brand that says:

Rebel Ice Cream is the lowest net carb ice cream on the market. Its healthy fats and zero sugars will allow you to indulge in creamy, full-fat ice cream without the negative impacts of sugar.

This brand is currently available in Peanut Butter Fudge, Mint Chocolate Chip, Butter Pecan, Cookie Dough, Strawberry, Coffee Chip, Chocolate and Vanilla.

I picked up a pint of Mint Chocolate Chip.

I was not disappointed.

Not only was it delicious and creamy but the ingredients are all keto friendly.

The mouth feel is smooth and creamy.

The taste was delicious and minty.

A tip on ice cream made with erythritol….. let it sit for a few minutes to soften before trying to scoop out of the container. This sugar replacement product seems to make the ice cream rock hard. But a few minutes of sitting softens it up nicely.

Personally I don’t like to keep lots of desserts hanging around so I only bought this one flavor. I know myself and my snacking habits and having lots of things on hand is very tempting. I don’t want to return to old habits of snacking all day.

Because of this I plan a nightly treat. I want it to taste delicious and be worthy of it being a special treat. I also don’t want it to be super high in carbs.

For tonight’s treat I decided to add a little something to the ice cream. Not that it needed it because it was delicious on its own. But because I was looking for a little something different. So I came up with this….

This was easy enough to make. I started with a cocoa Stoka Bar. They also have a vanilla almond flavor and a peanut chocolate chip flavor. I have tried the cocoa and vanilla almond. Both are delicious. Peanut chocolate chip just came out and I haven’t had a chance to try them. Yet. But very very soon!

Now these bars are insanely delicious and super crunchy. They are made with a limited number of ingredients and are keto friendly. And….only 4 net carbs each!

Start by crushing up the bar using a meat tenderizer or whatever heavy item you might have on hand. A rolling pin would work well too! The bars are nice and firm so you will not be able to break them up with your hands.

Once you’ve crushed it all up then open up the package to reveal your delicious cocoa crunch.

If you were wise you would have had your ice cream while you were crushing up the bar. Then it would be nice and scoopable. If you didn’t then you will have to suffer and wait for a few minutes before digging into this treat. Of course you could pass the time by eating some of the Stoka Bar bits. But you are going to want to save those for the ice cream.

As I was limiting my ice cream serving size to a 1/2 cup (yes just like the serving size on the package says) I decided to go with half the crushed Stoka bar. I have an ice cream scoop that perfectly scoops a half cup serving. To make your ice cream crunch take a scoop of ice cream and place it into the bowl of your choosing. Sprinkle half of the crushed Stoka Bar over the top.

Save the remainder in a little sandwich bag to be eaten with tomorrow’s treat. Or, sprinkle all of the crushed bar over the ice cream. Your choice. I was looking to keep my treat on the smaller size so the carb count wouldn’t get out of hand.

A 1/2 cup serving of Rebel Creamery Mint Chocolate Chip ice cream and a half of a Stoka Bar comes in at 3 net grams of carbs for this deliciousness. Now that’s a treat that I can enjoy without feeling guilty!
