What is Hasselback Chicken?

At some point you probably have come across a recipe for Hasselback Potatoes on the internet. These are potatoes that have been thinly sliced halfway through leaving the slices still attached. The slices are fanned out, brushed with butter, sometimes with cheese stuffed between the slices and then baked. This makes each slice nice and crisp.

Hasselback chicken uses a similar method (the chicken is thinly sliced) but combines it with the flavors of a Caprese salad (mozzarella, tomatoes and basil). What you get deliciously flavored chicken that cooks quickly making it a perfect meal for busy weeknights.

Ingredients for Hasselback Caprese Chicken:

  • Boneless, Skinless Chicken Breasts – you’ll want to use one chicken breast for each person you’re serving.
  • Fresh Mozzarella Cheese – you can use shredded mozzarella or go with a log of mozzarella so you can place a thin slice of mozzarella cheese in with each tomato slice.
  • Fresh Tomatoes – use your favorite type of tomato for this recipe. I love using plum tomatoes because they are a bit meatier than other varieties.
  • Basil Pesto – use homemade or store bought basil pesto for this recipe.

Optional ingredients:

  • Balsamic Glaze – you can add a drizzle of balsamic glaze or balsamic dressing to the top of each chicken breast before you serve it. Make your own glaze or look for a store bought variety in the salad dressing section in your local grocery store.

How to make this Hasselback Caprese Chicken recipe:

Preheat the oven to 400 degrees.

Line your baking dish with foil or parchment paper for an easier clean up.

Slice your mozzarella cheese and tomatoes into thin slices with a sharp knife. You can cut them in half to make them fit into the cuts in the chicken easier.

Place the chicken on a cutting board and make 5-6 cuts into each chicken breast. Don’t cut all the way through. You want to cut through but leave about 1/4 to 1/2 an inch uncut from the bottom.

Spread your pesto sauce in between each cut in the chicken breast.

In each cut add a slice of mozzarella cheese and a tomato slice. If you have fresh basil leaves add one to each slice as well.

Bake the chicken in a 400F oven for about 25 minutes or until the juices run clear and the internal temperature of the chicken is 165 F.

Remove the chicken from the oven and a drizzle of balsamic vinegar glaze if desired.

How to store Hasselback Chicken

Place any leftover chicken in an airtight container and store in the refrigerator for up to 5 days.

I often marinate my chicken first. It adds even more flavor to the chicken. Create a quick marinade by combining 1/4 cup olive oil, 1/4 cup balsamic vinegar and 1 1/2 tablespoons of Italian seasoning. Marinate the chicken breasts for 2 or more hours before following the directions below.

Swap out the cheese: we love using mozzarella cheese in this recipe. But you can swap it out for another type of cheese (slices or shredded) such as Parmesan cheese, Provolone cheese or Muenster cheese.

You can easily create lots of Hasselback chicken variations. You simply vary the seasoning and stuffing items based on the flavor combination you are making.

Greek Style Hasselback Chicken: swap out the mozzarella and pesto for feta cheese, fresh baby spinach and a sprinkle of Greek Seasoning.
