What I Ate Wednesday 4

Yet another round of What I Ate Wednesday. The wicked cool (why yes, I do live near Boston – home of the phrase wicked) weekly link party over at Peas and Crayons where everyone posts about what they’ve eaten that day. Each month has a theme and this month is:

This year is the first time I’ve ever been able to grow something in my little patch that I call a garden. Fresh from the garden veggies are now starting to show up in meals. Blackberries were added to tart filled with sliced apples. The first batch of cukes were turned into refrigerator pickles and tomatoes are starting to pop up in salads. Hopefully there will be more to come. If not from my own garden then from one of the local farms. I’ll be canning tomato sauce, salsa, homemade apple sauce and several other things by the time the end of August rolls around.

Until then here’s my last packed school lunch for this weeks WIAW. Chemistry is finally over this Thursday! Not a moment too soon. I’m fresh out of functioning brain cells.

Breakfast: cup of coffee at home while getting ready for school. Only two more days until it’s over. Lowish carb banana muffin and a cheese stick wrapped with a slice of ham all packaged up for my breakfast on the go. More coffee packed for the ride home from school.

Lunch included a chicken caesar salad with homemade dressing and croutons. Click protein shake to sip throughout the day. Chemistry is not exactly what I call an exciting class. Sometimes more caffeine (and protein) are needed to survive the day. Grapefruit slices topped with a sprinkle of cinnamon for snack once I got home.

Supper was taco salad with homemade avocado and tomato dressing topped with a dollop of sour cream. I’ll have to post this dressing next since it was actually a guac dip that morphed into salad dressing.

Snack while I was STILL doing chemistry homework was 1/2 a peanut butter surpreme quest bar. It wasn’t bad but I like the brownie one better. Also had a small amount of roasted peanuts. The other 1/2 of the bar will be saved for my final school lunch tomorrow.

    • Hi Jessica, It’s one of our favorite meals too! We jokingly designated Tuesdays as Taco Tuesday since we seem to eat some type of taco/mexican meal weekly. I always take whatever we have and make a salad out of it. Occasionally I crush some of the tortillas and top it for added crunch.
