What I Ate Wednesday 2

It’s time for What I Ate Wednesday over at Peas and Crayons.

I didn’t have as much time as I would have liked to check out a bunch of the other posts that had been linked up. I’m right in the middle of chemistry summer class hell and we are covering a chapter every 2 or 3 days as well as having labs twice a week. My days are currently spent getting ready, making the long commute to and from school, sitting through hours of class, making supper,  homework and then falling into a coma for the night unless I have to go to work 🙁

There are only 9 more days left. I look forward to it being done. So, this weeks WIAW is yet another packed lunch for school.

Bottom left is a hard boiled egg and, what I call a cheesestick rollup in a plastic bag. Take a slice of roast turkey (or meat of choice) and place a cheese stick at one end. Lay some shredded salad greens or shredded carrots along side the cheesestick and just roll it up.  This is my grab and go breakfast. Not shown is the cup of coffee that I drank while getting ready.

Lunch was a bowl of pumpkin blackbean soup (made from black beans that had been cooked in the crockpot) topped with cilantro (top left). Of course it didn’t look like that once I poured it into my thermos. Also a CLICK Espresso protein shake in mocha flavor still in it’s shaker bottle (middle right column). I also had red grapefruit slices topped with some cinnamon (bottom right column).

Once home I snacked on a granny smith apple dipped in almond butter (top right column). Also snacked on, but not shown, was a peanut butter cookie from the local grocery store. It was kind of a mindless snack. The kids were eating one and offered me one from the container. I do my best to avoid mindless, driveby snacking but sometimes it doesn’t work.

Dinner was a salad made with yesterdays leftover taco pie.

I kept the spieced ground pork, which was quite delicious, but removed the corn tortilla strips and topped it with shredded romaine lettuce, red peppers, onions, a few spoonfuls of black beans, homemade salsa and salsa verde, some cheddar cheese and a bit of sour cream. Good stuff. I could eat salad topped with whatever leftover meat we have on hand any day of the week.
