Lemon Parmesan Cod with Garlic Butter:

This doesn’t get much easier. Mix the spices with the Parmesan cheese, coat with butter, roll in the cheese and bake. By the time you get a salad prepared or heat up some veggies in the microwave the fish is done! I’ve served this with some salad and keto cauliflower mashed potatoes aka fauxtatoes (from my freezer meal stash). Delicious!

Unstuffed Eggrolls

Unstuffed Eggrolls:

We whip up this dish at least twice a month if not more often. I always keep a bag of coleslaw mix on hand. It’s great for using in salads or in dishes such as this. This can be on the table in 15 minutes. Simply brown the ground pork, toss in the coleslaw mix and add the sauce ingredients. Cook until the coleslaw mix has softened a bit and you are ready to serve it up.

Crustless Taco Pie

Make this delicious crustless taco pie for taco Tuesday or any other day of the week.

Crustless Taco Pie:

Whip up the taco seasoning mix and keep it on hand. There’s enough for more than one recipe. Or prep a double batch of meat and freeze half for another day. That cuts the time to create this recipe even more! It’s delicious and you won’t even miss the high carb shells.

Italian Chicken Stew:

Put your crockpot to good use and make this dish. Set it going on low when you leave for work and return home to a deliciously scented home and a meal ready to be eaten. Check out the resource library for a PDF file on how to prep this as a freezer meal.

Jalapeno Popper Casserole

Keto Jalapeno Popper Casserole is a quick cooking dish.

Jalapeno Popper Casserole:

Who doesn’t love Jalapeno Poppers? If you don’t care for much heat you can replace some of the jalapenos with mild diced green chili’s. The recipe still tastes delicious.

Oven Roasted Salmon With Parmesan Mayo Crust

Oven Roasted Salmon with Parmesan Mayo Crust:

You can use the recipe for the homemade mayo, found on the site, or just use store bought. Either way this salmon dish is incredibly easy to make and everyone will love it! Serve it up with a spinach salad and some asparagus (roast these in the oven the same time you cook the salmon) for a super fast lunch or dinner meal.

Philly Cheesesteak Skillet

Looking for a fast meal? You can't go wrong with this keto Philly Cheesesteak Skillet.

Philly Cheesesteak Skillet:

This is a favorite dish at my house. Eat it as a casserole or you can serve it over spaghetti squash or zoodles for a more filling meal. My favorite way to serve it is to use it to stuff peppers! Bonus points for this being a great freezer meal. I double or triple the batch when I make it. We eat one meal hot and then I package up the rest for future lunches or dinners.

Lemon Herb Chicken

Low carb keto Lemon Herb Chicken Recipe

Lemon Herb Chicken:

This is one of our favorite chicken marinades. Toss your chicken in a bag, cover it with marinade and stick it in the refrigerator until the next day. Then cook it on the grill, in the oven or in a pan. No matter how you cook it the chicken stays nice and tender. Even better. When prepping your bags of chicken make a few extra, top with marinade and store in the freezer. Take it out the day before you want to cook it and allow it to thaw in the refrigerator. It will continue to marinate while it is thawing. Eat the chicken with some keto cauliflower mashed potatoes and veggies. Or use the chicken to top your favorite salad mix.

Looking for a keto meal prep? Double or triple the batch of Lemon Herb Chicken and use it to create a delicious salad.
